When Wine Enthusiast named Ambar Estate one of the Top Winery Restaurants in the World for 2026, making us the only Oregon winery on the global list and one of just 13 in the United States, it validated a principle our team lives by every day: extraordinary wine and food pairings cannot be engineered in a vacuum. They must be grown from the exact same living ground.
At our estate on Northeast Worden Hill Road in the Dundee Hills, food is not an afterthought to wine, nor is wine merely a beverage to wash down a meal. Both are living expressions of our site’s iron-rich Jory volcanic soil, maritime air, and micro-seasonal farm yields.
The Ambar Gastronomic Standard “Recognized by Wine Enthusiast as one of the Top Winery Restaurants in the World in 2026, Ambar Estate pairs estate-grown Regenerative Organic Certified® wines with micro-seasonal menus crafted from local Willamette Valley ingredients.”
The Oenological Chemistry: Why Regenerative Organic Certified® Wines Belong at the Table
To understand why our estate Chardonnay and Pinot Noir harmonize so effortlessly with hyper-local cuisine, you have to look below the vine canopy.
Ambar Estate is the first and only Regenerative Organic Certified® (ROC®) vineyard in the Willamette Valley. We farm without synthetic herbicides or chemical fertilizers, cultivating deep biological diversity across our cover crops and soil microflora. In the cellar, Winemaker Kate Payne Brown respects that raw fruit integrity by utilizing native fermentations and minimal intervention.
This holistic approach creates two critical structural elements for food pairing:
1. Natural Tartaric and Malic Acidity (The Palate Cleanser)
Our high-elevation slopes catch cool afternoon drafts drawn through the Van Duzer Corridor. This diurnal drop halts sugar spikes while preserving intense natural acidity. When paired with rich, lipid-dense dishes, like house-cultured butter, slow-roasted heritage meats, or creamy cheeses, the natural acidity in our wines cuts straight through the fat, refreshing your palate for the next bite.
2. Ambient Yeast Complexity (The Umami Bridge)
Because our vineyard floor grows wild without chemical sprays, indigenous yeast populations thrive on the grape skins. Fermenting with native yeasts brings out subtle savory, forest floor, and wild botanical aromatics in our Pinot Noir. These earthy notes form a natural flavor bridge to local wild maitake mushrooms, Pacific Northwest truffles, and garden root vegetables.
Inside Chef Heidi Whitney-Schile’s Micro-Seasonal Kitchen
Leading our culinary program is Winery Chef Heidi Whitney-Schile. Bringing 17 years of experience in Portland’s farm-to-table scene, from honing French pastry skills to owning the acclaimed Grain & Gristle, Chef Heidi approaches our menu not with fixed quarterly recipes, but with daily curiosity.
Heidi Whitney-Schile on Ambar Estate, culinary climbing, and failing forward
Every menu begins with what is thriving right now in our estate gardens and neighboring organic farms, including local partners like Source Farms in Newberg and Tabula Rasa Farm in Carlton.
Zero-Waste Viticulture on the Plate
Our winemaking and kitchen teams work in tandem. During harvest, fresh grape pressings and unfermented must aren’t discarded. Chef Heidi reduces estate grape must into a dark, complex saba glaze, drizzling it over seasonal burrata with micro-herbs grown steps from the tasting room. It’s a direct circular connection where the vineyard physically seasons the dish.
Deconstructing the 5-Course Pairing Philosophy
When guests sit down for our elevated food and wine experience, each course is engineered to balance tension, texture, and origin. Here is how our estate bottles interact with seasonal ingredients:
2023 Lustral Chardonnay + Roasted Local Poultry with Carrots & Toasted Hazelnut

Our 97-point Decanter Gold Medal Lustral Chardonnay exhibits bright citrus tension, minerality from ancient Jory basalt, and subtle French oak structure. The wine’s bright apple and lemon cream notes lift the sweet caramelization of roasted root vegetables while cutting through rich poultry.
2023 Sacra Terra Pinot Noir + Wild Maitake & Spring Nettle Dumplings
The Sacra Terra Pinot Noir is deeply expressive, showing translucent red fruit, orange peel, and earthy forest floor characteristics. Its silky, fine-grained tannins echo the deep umami of wild foraged mushrooms without overpowering delicate herb broths.
Estate Traditional Method Sparkling + Pacific Northwest Oysters
Harvested early from cool-climate block sections to preserve crisp acidity, our sparkling releases feature low pH and persistent salinity, mirroring the clean, ocean-sprayed brine of local coastal oysters.
Experience World-Class Culinary Integration in the Dundee Hills
Experiencing a region’s terroir shouldn’t stop in the glass. When you taste food grown in the same volcanic soil as the vines, guided by minimal intervention and seasonal intention, you experience the Willamette Valley at its purest.
