The Temperature Difference Is Real

The Willamette Valley sits at roughly 45 degrees north, with a long, cool, gentle growing season and dry late summers. The Coast Range strips Pacific rain before it reaches the vineyards. The Cascades block continental heat from the east. What remains is a growing season where Chardonnay ripens slowly, accumulating complex flavour over weeks, not days, while retaining the natural acidity that warmer climates lose to heat.

Most California regions where Chardonnay is grown still receive enough warm sun to translate into sweeter-seeming fruit flavours and fleshier wines, even in the coolest coastal pockets like Russian River Valley and Santa Barbara.

What Malolactic Fermentation Is (and Why California Uses It)

Malolactic fermentation is the process in which malic acid gets converted into softer lactic acid. This transformation imparts the buttery notes associated with some styles of Chardonnay.

California producers adopted full malolactic fermentation widely in the 1980s because it solved a real problem: fruit ripened quickly in warmer climates, acidity was uneven from vintage to vintage, and full malolactic fermentation smoothed those irregularities while adding the rich, creamy texture consumers at the time preferred.

Dijon clones, introduced to Oregon in the 1980s, are special selections of Chardonnay vines originally from Burgundy, chosen for their ability to ripen evenly and produce wines with great balance and finesse. Today, they are the backbone of many top Oregon Chardonnays, where their precision and acidity shine in the cooler climate.

Earlier California-sourced clones planted in Oregon in the 1960s and 1970s didn’t naturally flourish here, they had been selected for warm-climate performance and high yield. The arrival of Dijon clones changed the equation entirely, giving Oregon winemakers the raw material to produce Chardonnay that actually belonged in this climate.
