Walk into a conventionally farmed vineyard in the middle of summer, and you might notice something unsettling: it’s completely silent. The ground between the vines is bare soil, stripped of life by synthetic herbicides. There are no insects buzzing in the canopy. It looks tidy, but it is fundamentally sterile.
At Ambar Estate, we are proud to be a little less tidy.
When you walk through our Dundee Hills, Oregon, winery, you see dozens of cover crop species growing freely. You hear bees working the native plants and see kestrels circling overhead. That vibrancy of life is the heartbeat of a resilient ecosystem. As the first Regenerative Organic Certified® (ROC) vineyard in the Willamette Valley, we believe farming without chemicals isn’t just about what you remove—it’s about the life you invite back in.
Replacing Chemicals with Natural Allies: Native Raptors, Pollinators, and Bee Friendly Farming
Standard viticulture often views any non-vine plant or insect as a threat to be eradicated. We see them as allies. Instead of applying toxic rodenticides, we rely on the local food chain. By placing dedicated perches along with nesting boxes for owls and kestrels, we let native raptors handle rodent control naturally from the sky.
To keep harmful insects in check, we dedicate portions of our land to native flora that attract beneficial predatory bugs and essential pollinators. This intentional habitat creation is a core reason we hold our Bee Friendly Farming certification—a standard that ensures our Oregon winery remains a sanctuary for the pollinators that keep our ecosystem in balance.
Building Healthy Soil Naturally with Cover Crops, No-Till Viticulture, and Carbon Sequestration
Great wine begins underground. When we acquired our land, it had been untouched by agriculture for decades, leaving us with a remarkable baseline of rich organic matter. Our daily goal is to protect that foundation.
Heavy tractor tilling is a common agricultural practice that, unfortunately, tears apart the microscopic fungal networks vines rely on for nutrients. We avoid this by allowing our diverse cover crops to break down naturally on the surface, locking carbon into the soil rather than releasing it.
During the colder months, we bring in flocks of sheep to manage the vegetation. Allowing them to graze acts as a natural mowing system, but more importantly, their light footprint prevents the severe soil compaction that heavy machinery would cause. Plus, they leave behind excellent natural fertilizer, entirely replacing the need for synthetic nitrogen.
Protecting the Pacific Northwest: Salmon-Safe and LIVE Certified at Our Willamette Valley Winery
How we farm directly impacts the broader environment. Because we refuse to use synthetic additives, the heavy Oregon rains never wash toxic runoff from our slopes into surrounding waterways. We are proudly Salmon-Safe and LIVE certified because we believe protecting the native spawning rivers and broader ecological health of our region is just as important as the wine we craft. Among the organic wineries in Oregon, we see this as our duty as stewards of the land.
Honoring Every Inch of Jory Clay: Precision Terroir Mapping for Our Pinot Noir and Chardonnay Clones
Trusting nature doesn’t mean ignoring science—in fact, our chemical-free approach demands intense precision. Before planting a single root in our iron-dense Jory clay, we ran comprehensive, sonar-guided scans of the earth below.
This high-tech underground mapping dictated exactly how we laid out the vineyard. From row direction to rootstock selection, every decision was tailored to the specific topography. We matched our unique terroir with 11 distinct Pinot Noir variations and 3 Chardonnay clones, ensuring the vines are perfectly adapted to their environment.
Unhindered by artificial fertilizers, the roots pull authentic character directly from the earth. The result is Deep Terroir: wines with unmatched structural depth, energetic acidity, and a pure expression of the site.
A Culture of Care from Soil to Glass: Solar-Powered, Regenerative Organic Winemaking in Oregon
The respect we show our land extends to the people who tend it. A cornerstone of our ROC status is an unwavering commitment to our small, family-run team. We guarantee living wages, safe working conditions, and a supportive atmosphere where our crew can truly thrive.
That ethos carries straight through to the final bottle. Our production space and tasting room operate entirely on solar energy. We also rethought our packaging to drastically cut our carbon footprint by:
- Utilizing lightweight glass to reduce shipping emissions.
- Eliminating unnecessary foil tops to minimize waste.
- Sealing every bottle with carbon-negative natural cork.
We invite you to experience this vibrant environment firsthand at Ambar Estate. Reserve a tasting at our solar-powered estate to witness our regenerative practices up close.
