
A SPARKLING BEGINNING
The First Fruit of Harvest 2025
Harvest 2025 has begun at Ambar Estate with Chardonnay, Pinot Noir, and Pinot Meunier fruit that will become our Méthode Champenoise (traditional method) sparkling wines. Winemaker Bryan Weil offers a glimpse into this exciting beginning:
“I always love bringing in the first grapes from harvest, smelling the bouquet of the fermentation, and all the energy that comes with this time of year in the vineyard and winery.
“As our vines have matured over the years since the first Ambar harvest in 2021, we’re getting deeper layers of complexity as the vines’ roots dig deeper into our volcanic soils on our dry-farmed, Regenerative Organic® certified vineyard. As vines age, they tend to ripen slower in the fall, so we are getting some good hang time that will result in beautiful flavors and textures in the finished wines.”
