A regenerative winery actively heals and improves the land with every growing season — rather than simply avoiding harm. While organic certification defines what a farmer cannot use, Regenerative Organic Certification® focuses on measurable outcomes: healthier soil, greater biodiversity, and a positive climate impact.

At Ambar Estate, our Dundee Hills vineyard is managed as a living ecosystem. The ancient Jory volcanic soil beneath our vines hosts billions of soil microorganisms, mycorrhizal fungal networks, and earthworm communities — all nurtured through regenerative viticulture to produce wines with uncommon depth and authentic sense of place.

This is why regenerative organic wine from the Dundee Hills AVA has a quality that standard organic wine alone cannot deliver — not just purity, but authentic terroir character that reflects the health of the land from which it came.

Cover Cropping & Soil Biology

Native grasses, clovers, and wildflowers grow between every vine row — feeding soil microbial life, fixing nitrogen, and supporting the mycorrhizal networks responsible for volcanic terroir expression.

Dry Farming & Native Yeast Fermentation

Our vines are never irrigated — pushing roots deep into Jory volcanic subsoil for moisture and trace minerals. Wild ambient yeast drives spontaneous fermentation in the cellar, delivering aromatic complexity impossible to replicate with commercial additions.

Estate Composting & Carbon Sequestration

Vine prunings, grape pomace, and organic matter are composted on-site and returned to the vineyard floor — building soil organic matter, sequestering carbon, and closing the farming loop without external inputs.

Biodiversity Corridors & Habitat Restoration

Native hedgerows, oak woodland borders, and wildflower strips support barn owls, mason bees, and beneficial predator insects that eliminate the need for any pest control sprays.

Committed to creating wines that express a time and place, we believe wines are born in the vineyard. The path from grapes to wine is thoughtfully guided through native fermentation, minimal intervention, and barrel fermentations that capture the true character of the vintage and Dundee Hills volcanic terroir.

Vineyard as Living Ecosystem

Our vine blocks are managed as diverse, interwoven ecosystems — not monocultures. Every plant, insect, and microbe plays a role in producing grapes with genuine depth and authentic sense of place.

Minimal Intervention Winemaking

Native yeast fermentation, gravity-flow cellaring, and minimal sulfite additions at bottling allow each wine to arrive in the glass as a transparent expression of the vintage and the Jory volcanic soil.

Measurable Soil Improvement

We conduct annual soil biology testing — measuring carbon, microbial biomass, and fungal networks. Regenerative farming is a provable commitment at Ambar Estate, not a marketing claim.

Organic wine avoids synthetic chemicals. Biodynamic wine follows the Demeter framework with lunar farming calendars. At Ambar Estate, the answer is yes to both, every season — and we have the soil biology data to prove it.
Ambar Estate produces certified organic, estate-grown Willamette Valley Pinot Noir and Willamette Valley Chardonnay from the Dundee Hills AVA. Our limited-release Lustral Library Collection is available exclusively through the Ambar Circle membership. Select wines are also available to purchase online.
