SIGNS OF THE VINTAGE

Our vines are full, and each new cluster carries the early promise of what is soon to come. Winemaker Bryan Weil offers a glimpse into what he and the team are seeing in the vineyard, and what he anticipates from the 2025 vintage:

“With the rhythm of the summer unfolding in the Dundee Hills, we’re excited to see healthy cluster development across the vineyard – an early sign of what’s shaping up to be a promising vintage. The full canopy, or leaves, you’ll notice during visits is intentional: it protects the fruit from intense sun exposure while maximizing photosynthesis to support even ripening. With balanced weather and a steady pace to the season so far, we’re optimistic that 2025 will yield wines of vibrant character and elegance, true to our site. Veraison, which is when the Pinot Noir turns purple and the Chardonnay skins soften, is just around the corner and will set the schedule for harvest, which is looking to be in late August or early September for sparkling, and shortly after that for the still wines.”

Miso Tahini Dip

MISO TAHINI DIP

Creamy, vibrant, and deeply flavorful, Chef Heidi’s Miso Tahini Dip is a summer essential. Whether served alongside crisp seasonal vegetables or grilled produce, its savory depth and bright finish pairs beautifully with our 2022 Lustral Chardonnay, recently awarded a Gold Medal at the Decanter World Wine Awards.

We’re pleased to share the recipe, now available on our News page along with more seasonal offerings by Chef Heidi, past newsletters, and press articles featuring Ambar Estate.

With heartfelt thanks,
